oh the lazy sunday, how I love sunday.

and of course I wake up at dawn. EVERYDAY.
but its ok, because its sunday.

This morning, Charles is watching Formula one, mom is making breakfast (apple crisp), and I am blogging.....like I said, happy happy sunday.

I want to do something with Jícama - I always see it in the store and wonder, What the heck is this?

//High in carbohydrates in the form of dietary fiber.
//Composed of 86%-90% water.
//Contains only trace amounts of protein and lipids.
//Sweet flavor (comes from oligofructose inslin)

Cooking: Cut into wedges, dipped in salsa. Popular in salads, fresh fruit combos, etc.

i found a recipe that i want to try that involves this little guy:



Ingredients:
  • 1 jicama, sliced
  • 1 mango, sliced
  • Juice of 1 lime
  • Half a jalepeno pepper (seeds removed), finely diced
  • 1 teaspoon of sugar
  • Salt & Pepper to Taste

Combine and enjoy.

to sum it all up.


happy friday!

there are so many things going in my head right now, so many thoughts, so many ideas that I wish to express.


- CHARLIE GOT A JOB IN ATLANTA!
which is fantastic! I am so happy for him. He will be doing something with a 3rd party software company that writes programs for stock companies, etc.

- WE ARE ALMOST PACKED!
on track to leaving September 12. Excited to unpack in our own little place. :)

- SCHOOL STARTS SEPTEMBER 28!
this is almost torture waiting for something that I want to happen really really badly!

I am nervous/excited about the future events ahead. I am adjusting to being a wife, but still its been a month.


After exercising everyday for the past two weeks, whether that be pilates, biking, or jogging, I feel more firm. I feel tighter. I feel better about myself. I like being active.

Which leads me into yesterday - Charlie and I went biking for 13.3 miles.
We rode down to this little preserve which features a bunch of trails and paths.
HOLY WOW! It was great, but goodness I was exhausted afterward and I waited too long to eat dinner, not recommended. Oh, but dinner was really good. Charlie and I went over to my aunt and uncles casa for a nice meal of beef, new potatoes (very tasty), broccoli, salad, and cottage cheese. YUM!


This morning, I was reading:
2 COR 2:14 -
"But thank God! He has made us his captives and continues to lead us along in Christ’s triumphal procession. Now he uses us to spread the knowledge of Christ everywhere, like a sweet perfume."
-this was so encouraging! God has made me his captive and because of this I spread the knowledge of Christ, like sweet perfume. However to spread the knowledge of Christ I realize that I must be in Christ (1 John) and that I must be in scripture studying, learning. To be a christian means to be a "little Christ" and this scripture just reaffirms my privilege as a Christan.

Saturday night blues.

EVENING!

Today was a great day, filled with lots of family, friends, and food! However, first I shall post a little something something I made Charlie for lunch the other day.

Pizza! Stuffed Pizza.
This was the stuffed part = butter, Parmesan, thyme, roasted garlic.


Little bit of fresh thyme for you viewing pleasure:
such a great herb! I love the added taste that it provides!

- Charlie and I had the engagement party today, it went superb! I was happy to meet people that I hadnt met/see friends and whatnot. I cannot believe that we are actually leaving in three weeks and to think that we wanted to be out of here at the end of August, CRAZY!

Tonight, Charlie went alligator hunting. I am here. ALONE (well not alone alone, there are people in the house, but they are not Charlie). I am missing him beyond all reasonable belief. Goodness me.

Tomorrow morning - FORMULA ONE RACE & CHURCH. plus breakfast!

whole lotta update


what what?!? its update time.

first: I want to eat better, not as in more salads, but more pure, natural foods. I want to go raw, not like full on completely raw (goodness knows I wouldn't survive without coffee), but raw-ish. My body has become terrible at processing the other kind of food.

Today I went shopping at Whole Foods, wow!
my purchases:

- Soynut Butter
- A whole lotta Laurabars!
- Wasabi Peas
- Granola
- Vanilla Goat Milk Yogurt
- Tofu, Regular Firm & Italian Seasoned
- Green Smoothie Drinks
- Fruit: Figs, Pears, Grapefruit, Plouts, Cantelope, Blueberries
- Vegetables: Carrots, Avacado
- Miso Soup

ok, holy yum!

I want to post more pictures on here, not just words....black and white tend to be boring.

I went running today!
this is apart of my new goals for myself, I want to become more active.


HAPPY ONE MONTH NINJA WEDDING ANNIVERSARY!

FINALLY

FINALLY FINALLY!
were back! Charles and I were able to re-live the times of living alone! Hoorah! We went to the bookstore, drank coffee, chatted, cooked dinner, ate dinner, enjoyed eachothers company, etc.

IT WAS BLISS!
and as i type this, we are laying in bed! :) (he is reading a book, im not ignoring him.)


charles obviously has no taste in electronics (at least when it comes to operating systems)



a little rejoice from yesterdays cooking experience = lemon bars ftw!


dinner. started with tomato.

and magically turned into this (well...theres just lettuce underneath it...complicated i know)


and then there was chicken, which charles so graciously chopped for me. i mean to use that cutting board and knife...i practically had to restrain myself...


and since charlie will NOT eat mayo, we made our own chicken salad.
super easy. super tasty. and! as a bonus, let calories then normal mayo based chicken salad.

to create: chopped chicken
sesame oil
walnut oil
sesame seeds
dash of garlic salt and other spices.
see, that was easy. and tasty too.


poached eggs ftw.

sure.

my fake bruchetta = toasted wheat bread with evoo, and bruchetta mixture (from a jar), with a few chopped tomatoes.
for the finale. we have a tasty plate here.
baked lettuce & tomato topped with a poached egg, a touch of evoo & thyme. served with baked peas. um..yes please.

and so the scene was set.


and made one happy boy.
