a little but of update

Apologies for the delay. Life has been happening at rapid speed. However, on my second trip to GA Charlie and I stopped in Atlanta for a couple of hours.

I found this as inspiration:

Buttermilk maple thyme biscuits:
Spinach Fritatta:
spinach
tomato
mushroom
turkey & swiss cheese
cream cheese
basil
oregano
pumpkin pie spice
eggs w/ s & p

start with spinach and layer, adding the eggs last.

bake @ 400 for 15 minutes.
broil HI for 4 minutes.

enjoy!



and more hiking, getting rained on, running down the mountain trail trying not to get our cameras wet and then freezing our butts off when we stopped.

summer days equal joy.

lovely sunday

today was a great sunday.
for the first time in a long time i was relaxed. there was no thinking of other things, no wanting to be somewhere else, no pointless conversation.

just good food (see tasty goodness below). good company (see handsome boy below), and happiness in the air.


so our meal was an all day affair.
we went to the farmers market to pick out the gorgeous vegetables and fruit (which we never ended up grilling due to the overabundance of dinner).

the theme for tonight:

simple pure vegetables
with a whole lot of dips =
hummus, sun-dried tomato hummus, feta and spinach hummus, spinach and feta cottage cheese, sun-dried tomato cottage cheese, cool creamy cucumbery dip, cottage cheese & greek yogurt dip, tangy zippy mustard dip, cranberry tangy zippy mustard dip.





today was a fantastic day. :)

my heart is happy.

"electric" grilling

this is how my night began and this is how it ended:

tasty things being created:

the theme for dinner = grilled

mushrooms
eggplant
orange bell pepper (which are rather sweet)
zucchuni
radacchino
tofu

all marinated in balsamic vinegar, evoo, s & p , garlic, and fresh(ish) mint leaves.

speaking of which

and then!
there was a salad!

grilled strawberries (marinated in balsamic vinegar & stevia in the raw)
spinach
feta
pecans

(there are no pictures of this because by the time we were done assemblying we were hungry and it was too good to waste)

improvisation = new inventions

what i thought i was baking was not what i ended up with.
i had already altered the recipe to my liking (because i am creative and this is what i do).
however.
when it came time to add the vanilla extract, i searched.

and searched.

what?!?
there is NO vanilla extract. (yes, i couldnt believe it either)

however again.
i improvised. and used maple syrup.

ok so i add the maple syrup. moving right along.
i beat my egg whites (which were less than. ill admit that) but i add them.
and yet something is still missing....just that it thing.

so im looking around.

and behold. BANANA. score, banana added.

however.

after the banana there was still something missing (like a crunch factor).
so then comes the cinnamon gram crackers. oh yes.


BEHOLD!
and after they were baked:



(so bear with me on this whole food photography thing, like i said...im still learning)

oh and as for the recipe (SB style of course)

sweetened coconut flakes
sweetened condensed milk
maple syrup
egg whites (with a dash of salt)
banana
cinnamon gram crackers

oven = 350 degrees.

add sweetened condensed milk, banana, gram crackers, maple syrup, and coconut flakes.

whip egg whites until soft peaks form.

fold in.

bake 10 - 12 minutes.

treats for happy people

i am a photographer. this is true. however i am not particularly strong in the area of food/baking photography. i am trying, however the photos from what i baked today are not going to be posted so i will just write about what it was!

CRUMBLY BITS OF TASTY FLAVORS

cinnamon gram crackers
butter
sweetened coconut flakes
andes mints
white chocolate
toasted pecans
sweetened condensed milk

oven = 350 degrees

mix gram crackers and butter for crust.

layer everything else.

pour sweetened condensed milk over top.

bake for 30 mins.

enjoy.


so now you can only imagine what it looks like.
