raw apple cinnamon donuts

it seems like donuts are becoming a trend, perhaps just to me....
anyhow after several run-ins with donuts, i was left with longing. 

thus the raw version. 

adapted from Matt Kennedy's 

raw apple cinnamon donuts

2 2/3 c buckwheat flour
1 1/3 c almond flour 
1/2 t salt
1 t cinnamon
1/2 t nutmeg
1/4 t nutmeg
1 chopped apple
1/2 c coconut oil, melted
1/2 c coconut water
1 t vanilla extract
1/2 c maple syrup
flax meal, until batter firms up a bit

2 c date paste (used california dates, coconut water & lemon juice.)

mix the dry ingredients in mixer, add chopped apple, coconut oil, water, extract, maple syrup, and then date paste. mix.
add flax meal until the batter firms up. 

form donut holes or scoop onto dehydrator sheet.

dehydrate for four hours.

sprinkle w/ cinnamon.

Fall Raw Food

A little bit of goodness for the fall time.


RAW PECAN TART
   sweet tart crust made from almonds & agave, filled with a pecan, date, & coconut water combination, topped with pecan halves. 



CHOCOLATE ALMOND CRUNCH COOKIE
sweet, crunchy, chewy and not to almond overbearing!



APPLE CINNAMON TART
sweet tart crust made from almonds and agave, filled with cinnamon sprinkled apples & sweet raisins.


Ive been on the move this season, barely stopping to sleep. 
It's really been a blast though, learning & living. 

I am excited for Thanksgiving.....my menu of items to bring to SC this year include:

Pumpkin Muffins for morning breakfast.
Pumpkin Cheesecake
Raw Chocolate Mousse Cake
Winter Greens Salad w/ toasted walnuts, dried cranberries, & some sort of cheese.

Midtown Farmers Market

Its fall time and you know what that means..FARMERS MARKETS! Nothing I love more then a quaint open-air market.

OOH LA RAW is premiering at Midtown Market on Wednesdays from 4 - 7pm @ 999 Peachtree St.


WOOT! It was quite windy!

ON RAW FOOD AND HEALTH

       Raw and living food is synonyms with healthy living. Simply put, eating raw and living foods serve as a launching pad for being healthy in other areas of your life. The desire for a clean lifestyle can become a reality when the proper diet is executed. The energy attained is sustainable energy that affects every faucet of a healthy lifestyle. Physical energy is higher yielding more effective workouts and better sleeping habits; increased mental energy provides clarity, positive focus, and mental stamina; heightened emotional energy that helps the body to be more attune to the energy of others; digestive energy produced from raw and living foods allows the internal organs to process the food quickly and more efficiently, resulting in excess energy to be used in some other fashion to enhance the living experience.
The benefits of eating a raw and living food diet include: clearer eyes and skin, improved circulation, improved digestion, improved energy, reduced risk of heart disease, and weight loss. The diet includes many enzyme-rich super foods including: leafy greens, goji berries, cacao, maca, spirulina, and berries to name a few. These super foods are full of antioxidants and phytonutrients that serve as an excellent source of fiber, protein, carbohydrates, fats, and many vitamins and minerals; also contributing to the prevention of disease and maintaining optimal health.
Raw foods can be described as fruits, vegetables, nuts, seeds, and herbs that are enjoyed in their natural state. When the foods are cooked above 116 degrees Fahrenheit the molecular structure changes; the enzymes are destroyed. Raw food meals can be as simple as chopped veggies in a salad or as gourmet as saffron infused vanilla ice kream. However, raw food is energy efficient because there is no need for use of the microwave, oven, or stove.
Our diet affects more then we know, choosing to eat healthy and pure food is just a segway into living a healthy and pure lifestyle.  When we eat clean, we think clean and thus we began to incorporate healthy eating patterns that make living a healthy lifestyle simple.

vacation, photoshoot, & raw food

This is a HUGE 3 part post.

Part one: Vacation  

Charlie and I spent the last week in Florida visiting friends, family, and the beach. We celebrated our one year anniversary in the place that we fell in love and got married.

However, sadly my camera died and I realized that my charger was 7 hours away...not worth it.

but not before I shot this.

Part Two: Photoshoot


























Part Three: Raw Food

Layered Chocolate Mint Bar

Layer 1: Chocolate Brownie

½ c soaked almonds
½ c walnuts
2.5 T cocoa powder
2.5 T coconut oil
2.5 medjool dates
1 t vanilla extract
pinch of sea salt

Blend almonds and walnuts until meal-like consistency.
Add everything else; process until smooth.
Line pan and refrigerate.

Layer 2: Almond Butter Mixture

½ t cocoa powder
½ t agave nectar
1 T coconut oil
1 T maple syrup
½ c almond butter

Combine almond butter with everything else.
Spread on chocolate brownie layer.

Layer 3: Chocolate Mint Glaze

¼ c coconut oil
1 T cocoa
¼ t mint extract

Mix and pour on top.
Place in freezer.

Layer one: Chocolate Brownie

½ c soaked almonds
½ c walnuts
2.5 T cocoa powder
2.5 T coconut oil
2.5 medjool dates
1 t vanilla extract
pinch of sea salt

Blend almonds and walnuts until meal-like consistency.
Add everything else; process until smooth.
 Push into circular molds and refrigerate.

Place Raspberries on top, fill in with layer two.

Layer two: Chocolate

2 T coconut oil
½ t cocoa powder
½ t maple syrup

Mix together; pour into mold, freeze.

Raspberry Sauce

¼ c raspberries
1 T agave

raw spinach mushroom quiche

raw mushroom spinach quiche

(adapted from Ani Phyo's Raw Food Essentials)

crust.
zucchini flat bread:

2 c chopped zucchini
1/4 c evoo
1 t sea salt
1 c sprouted flour
1 c flax meal

place the zucchini, oil, & salt and process into a puree.
add the sprouted flour and flax meal and process into batter.
spread evenly on a dehydrator tray and dehydrate for 6 - 8 hours.

filling.

2 t garlic
1 t sea salt
2 c cashews
1/4 c lemon juice
1/2 - 3/4 c water, as needed
1 c spinach
2 c mushrooms

place the garlic & salt into food processor and process into small pieces.
add the cashews; process. add lemon juice, water, and process into thick consistency.
add the spinach and mushrooms; pulse lightly. 
scoop into quiche crust. 
dehydrate 2 - 4 hours. 

enjoy.

1 tsp vanilla extract

blend until milky. 
refrigerate.

to start off, a couple of cookies.

alternate baking company's espresso chip vegan cookie. 
- made with rice flour, this cookie is a soft alternative to regular chipped cookies made with eggs and milk. The taste was average for vegan cookies.

nana's no gluten chocolate cookie. 
this was a disappointment. what i was expecting was not what i found, the cookie taste was not the problem, it was the texture: it crumbled, but a moist crumble. 
rating: 2.0


and now on to the baking:
 (i find that now that school is over I want to cook more and be in my own kitchen more)

one.        cheesecake with a chocolate crust

i started with a double chocolate chip cookie and life cereal in a food processor, added butter and sugar, and baked at 350 for 10 minutes. 

then i made a cheesecake batter made of cream cheese, sugar, eggs, and vanilla. 

i poured it in the baked crust and baked again for 25 minutes.

whole grain wheat bread

1/3 c + 1 T brown sugar
2 c warm water
2 pkgs of active dry yeast
5 - 6 c whole wheat flour
3/4 c powered milk
2 t salt
1/3 c oil

dissolve 1 T brown sugar in the warm water, add yeast. let stand.

combine 4 c flour, powered milk, 1/3 c brown sugar and salt in mixer. 
speed 2 for 15 seconds. 

add yeast mixture and oil to flour mixture and mix about 1.5 minutes longer. 
stop and scrape if necessary. 

add remaining flour 1/2 c at a time. 
mix 2 minutes longer. 

place in greased bowl, cover, let rest 1 hr. 

punch down, divide in half, shape and proof. 

bake at 400 for 15 minutes, the 300 for 30 more minutes. 

The flavor really is tops. It is soft on the inside with a harder crust on the outside.

start with frozen bananas. process a bit. 
i added a few leftover cookies. 
precessed more.
