Id like to start off with this little beauty:
Apple Tarte Tatin:
(baked with cinnamon & drizzled with caramel)
this is when it "clicked". I was reducing my caramel sauce and I went to pour it over the tarte tatin and wound up with something really gorgeous, i couldnt believe it.
Pithivier:
(puff pastry with a almond cream center)
Brie En Croute:
Vol Au Ven:
(filled with mushroom soup or carrot coup topped with basil)
Cream Horns:
(puff pastry filled with moussline topped with powered sugar and chocolate)
Elephant Ears:
(puff pastry rolled with sugar, cinnamon, cloves, allspice, nutmeg)
today is practical day!
